My mother taught me to use the backing. Make the backing bigger than the top and then fold it over toward the top and then stitch it down along the top of the quilt. She would usually leave about 12" at the top and 6" on the sides and fold down an inch and then fold in half and sew down. I hope that might be helpful!

Do you mean bias strips? Or the binding tape you buy? There are several ways to finish a quilt but, IMO using a bias strip is the best.

You can also fold both the top and bottom edges under and run a row of stitching around the edges.

I just saw a unique item yesterday at my fabric store. It is a bias tape that when washed it looks like chenille. If you use this and sew one on top of the quilt and one on the bottom of the quilt so that they match up and over lap the edge, than wash it, it looks like a chenille edge. They showed me an example on a baby quilt. I am going to try this on the blankets made with fleece for my nieces new baby.
