Egg substitute is a thing people who allergic to eggs, or are vegan (or concerned about salmonella) can use. Ener-G egg replacer (and Egg Like plus another couple of brands) - a mixture of potato starch, flour and leavening - is available at most health food stores and now in several supermarkets.
