Vitamin A Dark orange, yellow, red fruits and vegetables are rich sources of beta-carotene and other carotenoids. Since these pigments are also found in chlorophyll-rich plants which mask the orange color, dark green leafy vegetables are also rich sources of carotenoids. Retinol is found in whole milk, butter, cheese or other dairy products and in beef and chicken liver. It is added as retinyl palmitate or other retinyl esters to cereals, skim milk and margarine. Vitamin B Thiamin - Thiamin is provided by consumption of whole grains, nuts, fish, pork, dried beans, and enriched grain products. In general, foods rich in protein, with exception of tryptophan-poor grains, can satisfy some of the demand for niacin. Highest in is fresh OJ. Vitamin D Natural sources of vitamin D in the food supply are few. Fish and fish oils are the richest sources of vitamin D, but amounts contributed by these foods are not reliable. Consequently, whole and skim milk are fortified with vitamin D. Other dairy products may not contain vitamin D unless fortified milk was used in their manufacture. Vegetable oils and whole grains are additional rich sources of this nutrient. Nuts, peanut butter, salad dressings and vegetable oils are also good sources of vitamin E. Vitamin K Vitamin K is consumed primarily from green leafy vegetables and some fruits. It may also be found in dairy products, meats and eggs. See table for dietary sources.
