Red or white grape juice makes a good substitute for wine in most recipes. [Added in response to QuestionBoy] Alcohol does not completely burn away. Roughly only half ever gets cooked off.

The above answer is totally WRONG! Not true. Use equal parts vingegar and lemon juice. Usually a couple Tbs will do the job when 1/3 C. is required.

In my opinion, the best replacement for wine in a savory dish would be a stock or broth that will compliment the flavors of whatever it is you are making.

I would agree with using the red or white grape juice, but whoever said the alcohol doesn't go away after it's cooked is wrong. Even the cooks on TV tell you it cooks off and it's not like they can get away with lying on air. You could probably use fruit juice of other types depending on what you're making.
