  • Go bad? It's pretty awful already. I like what Justin Wilson used to say, "The wine you use to cook with should be the wine you like to drink." Cooking wine has salt added to make it unpalatable, so folks in dry states can buy it too. Be sure to reduce the salt in any recipe. But the salt does extend the shelf life. Cooking wine will last a long long time but you should use it within a year, and refrigeration doesn't help , it don't hurt, but it won't extend the shelf life. Real wine, tightly recorked in the refrigerator, a week or more for cooking purposes, reds a bit longer.
