Why does the chocolate used in making Cadbury's (UK) Easter eggs, taste different from the chocolate they use in their 'bars' of chocolate?

I have noticed with working in a sweet shop that the bars have a shelf life of up to 2 years,where the easter eggs only a few months i put this down to them not wanting to buy them cheap after easter and keeping them,so it might have something to do with that if not i find it odd why the different shelf life.
