Depends on the veggie, and the recipe. If your going to cook tomatoes, submerge them in boiling water and the peels will slide right off. If it is potatoes, squash, etc. I guess a knife. But there are lots of nutrients in the peel too.

I usually use a small paring knife. For carrots, I use the unsharpened side and just scrap it.

I would use a paring knife,but I like to use a peeler made by Rada Mfg which is MADE IN USA I noticed a site that offers these at good prices www.kit-master.com
