  • Baking flours are generally made from wheat. However, there are different flours that can be made from corn, rice and others. Each type of baking flour is used for a different task or baking purpose.

    All-Purpose Flour

All-purpose flour, also known as plain flour, is made up of hard wheat and soft wheat blended together. This is the most common type of flour in the United States.

    Bread Flour

Bread flour is made from hard wheat that is high in protein and gluten. The bread flour is often treated with ascorbic acid to create a better texture as well as to increase volume.

    Cake Flour

Cake flour is made of soft wheat that is high in starch and has a fine texture. Through a process called chlorination, the flour becomes slightly acidic, which helps the cake set faster as well as distributes fat more evenly in the batter.

    Rice Flour

Rice flour is made from finely milled grains of rice and is generally used in Japanese cuisine.

    Semolina Flour

Semolina flour is made of durum wheat, which is the hardest of wheats; it is very high in gluten. Semolina flour is used to make pasta and Italian puddings.

    Whole-wheat Flour

Whole-wheat flour is made up of the entire kernel of wheat. Whole-wheat flour has the highest nutrient content (especially dietary fiber), as well as a low level of gluten.
