For in the car, I alternate between those pre-wrapped mozzarella sticks, a mini-box of raisins, and an hard-boiled egg (also packed in a ziploc baggie with a napkin, and only good when I'm not the driver!) And keep a few Slim-Fast 'meal-on-the-go' high protein bars (best of my taste-test at 190 cal) in the glove box in case you get stuck away from food for hours (like in a highway jam), and feel a crash coming on -- I keep a mini bottle of water in the car too.

My job required me to live in my car (almost) so I like dried fruits (especially figs and dates) and shelled nuts (unshelled pistachios and peanuts can be a driving hazard, but I can't help myself). Very handy and resilient in terms of weather (don't require refrigeration).
