Here are some types:
Application servers, Chat servers, fax servers, FTP servers, groupware servers, audio/video servers, IRC servers, list servers, mail servers. News servers, proxy servers, telnet servers, Web servers.
There are 14 types of server:

>Chat Servers
>Fax Servers
>FTP Servers
>Groupware Servers
>IRC Servers
>List Servers
>Mail Servers
>News servers
>Proxy Servers
>Telnet Servers
>Web Servers
Just three main types. Computer servers, restaurant servers and tennis servers. :)

Rack, deskside,mainframe, super/cluster, network server.

In addition to perryman's answer, there are differnt operating systems for servers:
Unix
Linux
Windows
Solaris
Novell
and some others...
All the answeres that perryman gave you need to have a Server Operating system to function. Pick one, they are all equally complex and have thier own quarks, I know I am a certified Windows and Novell Admin. :)
