When you hit a deer with a car it usually ruins the meat. (Think bruising on you)
If the organs are ruptured, stomach, spleen, intestines, the carcass needs to be cleaned immediately or the meat is tainted.

Yes. We did. We were on the way to my father in laws for my husband to hunt with his dad. So he even had his knife right there ready. He pulled over, hoped out, slit it throat, and strapped it on the hood. And off to dads we went.

You just go to the nearest Deer check station and they give you a tag so you can keep it legally.
