I like firm. It's good plain (in a sandwich), or fries up nicely.

Extra Firm...it cooks up well and keeps its shape, doesnt get mushy. I use it in stir fry.

Chicken is far preferable to either; however, if I am eating tofu, I prefer it to be more firm.

Depends on what you want to do with it (No, not throw it) For general, have around the fridge kind of tofu, I'd recommend Extra firm becasue it will hold it's shape better when you cut it and cook it. It's also better to press it to get some moisture out of it. That makes it even more firm. But if you want it to replace some dairy in recipes, like soft cheese or something, the Silken tofu is good. You can make great cheesecake and custardy things with Silken soft tofu.
