  • I do not eat fish. But i have made salmon sushi, but raw salmon can contain parasites. ewww. So use smoked salmon. Or salmon that have been frozen for 72 hours, 48 if salted. This is often done on the fishing vessels. Talk to your fish monger. Always know where and when the salmon was caught. Or consider using toro (part of the tuna that resembles salmon). If you do want to eat it raw (sashimi) use lots of wasabi, the idea being that it will kill the parasites. As a general rule you should not eat fresh water fish raw. Hope this helps.
