  • You CAN wash mushrooms. If they're dirty, wash them.
  • It depends how you're going to cook them. Mushrooms absorb water so if you're going to fry them or have them raw in a salad, you don't want them to be wet, just wipe them. If you're going to drop them in a stew or something like that, it doesn't matter.
  • It's an old wives tale that they will "absorb water". It's just one of those useless bits of culinary "wisdom" that have no basis in reality, like salting and "bleeding" eggplant, or adding baking soda to cooking beans.
  • I always do and they taste just as good.
  • You should always wash mushrooms. They're raised in manure, in case you didn't know that.
  • They absorb water but you can wash them just before using them. Dry them off if you are using them in a salad. Always store them in a paper bag as well. Plastic wrap will make them sweat.
  • They make a mushroom brush just for the purpose of washing them. Raised in spores, you risk illness NOT washing them. There is no dish that you do not wash them for. They release liquid when cooked. Raw they require cleaning even more, and they do not absorb enough water in a good, thorough cleaning to tell the difference.
