Can you make coffee out of raw green coffee beans or must the beans be roasted first?

    No, raw coffee beans have a husk or a shell like covering which is tender prior to roasting. Roasting the beans reveals the "coffee like" properties such as flavor, oils, and complexities which we are accustomed to and also separates the husks from the true bean. Running hot water on raw coffee beans would be the same as trying to make chili with kidney beans which have not been soaked, ie.. Not going to work.
