That depends on the kind of cheese. Some of the "sharper" hard cheeses can age at room temperature for days without going bad. Soft cheeses should be refrigerated at all times. For example, I won't eat cream cheese dips if they have been sitting out unrefrigerated for more than an hour. If you have a good, sharp cheddar or provolone, I wouldn't worry about them sitting out. Just cut off the outside part as it tends to get dry as it sits out. This will also discard anything that might have started growing on the surface. Harder cheeses such as Parmesan or Romano probably won't go bad for months if left out, because they don't contain enough moisture to support bacterial growth.
