  • Just slicing or cubing. No need to peel, blanch or salt it. Our family love moussaka, and we always grow a big bunch in the garden. My mom just slices it, freezes it on a tray, bags it and labels it. The slices are ready to use in moussaka as soon as they are thawed. She does the same with squash and zucchini.
