I understand that most of the food is,because the natural chemicals in hot peppers kills of intestinal germs and viruses.That is why they can drink the local water and not get ill,when foreigners can get sick from it.

No, certainly not. It depends on personal taste. And most Mexicans eat the same vegetables in the same way most other people do...and the desserts are just as sweet.

We Americans think that the Mexican diet is spicy. It really isn't.

When I was last in Central Mexico the restaurant food was mild but they offered plenty of hot sauce on the table. Not everybody likes it hot even in Mexico.
