chicken liver - no contest, more delicate flavor, more versatile.

Calves liver is great but beef liver is too strong, so I'd go for chicken liver in this case.

For some reason poultry liver is the only organ meat I can't stand to eat. I always opt for beef (calf). Unless I'm making pate.

I love them both, but chicken is definitely nicer. Shame there's less of it.

Calf is supposedly the best. Next I'd take chicken. Beef would be last.

Chicken liver is smooth in texture and doesn't have the strong flavor of beef liver. Chicken liver for me, although I do like beef liver fried in a little wine, bacon bits, and onion too.

I gave up eating animals years ago, but when I did I could make either one taste awesome.
