My guess is that: 1) your jars have some chips around the top so a seal can't be reached; 2) you're using old lids (the rubber gets hard) preventing a seal; 3) if you're using rings that aren't perfectly clean or have some rust, they can't seal; 4) or most likely, you're not tightening the rings adequately; 5) you're over-filling the jars.
