Was the tree of the knowledge of good and evil physical or spiritual? If physical then what evidence do we have of it? If spiritual then why make physical imagery of it?

I'd like to offer you an explanation where both could apply. It was physical but its representation was disguised to keep initiates "in the know" as to what it actually was, and maintain the unwashed masses in ignorance ( in the dark) by believing its literal portrayal. This answers the second part of your question, because by continuing on the ruse of symbollic disguise, the knowledge of what it represented could be passed down through the priest hood for generations. Of course the effects of partaking from the tree of knowledge would have no less a spiritual effect. The works of John Allegro and several other ethnomycologists / comparative religious researchers would testify to this theory.
