  • I know what you mean! Last year, my cousin from Vidalia actually mailed me a box full of onions. I thanked him, but sheesh! I ended up chopping most and putting them into small baggies in the freezer.

  • You wouldn't want to use them in something like French Onion Soup, or anything that would overpower the taste. The other suggestions here are perfect -- salads, onion rings, potato salad. And on hamburgers. When you slice into one, cut off a small slice and eat it raw so you have a sense of the taste. They are, in fact, very sweet, without the same kind of "bite" that other onions have. Other answers have covered pretty much all of the best ideas, but the general principle is that the taste of this kind of onion is something you'll want to highlight in what you cook, rather than bury.
  • Vidalias are sweet and mild. They are about the only onion that some people actually slice up and make into a sandwich. So they are particularly valued for use where you want fresh onions. Burgers, sandwiches, fajitas, salads. Be creative, and Bon Appétit.

  • You could caramelize a bunch of them. I do 5 lbs at a time in the oven, in a large dutch oven, something heavy with a lid, and they reduce to just 2 1/2 cups when I'm through.
