G'day keithold Thank you for your question. i cant really cook and i wouldnt consider canned soup a signature dish...but my mom makes an excellent roast and awesome scrambled eggs and really good split pea soup. i would say that my moms signature dish is her split pea soup. Reguards

my fried rice. I made it for some Indonesian visitors, who were staying with us, and the next time I was in Indonesia, one of them, who is manager of a hotel, was telling everyone how good my fried rice is. I was REALLLYYY flattered. :-)

Grilled Spicey Thai Chicken served on a bed of crisp briefly cooked thin cabbage ,carrot etc. Topped with a glaze of Sweet chilli peanut sauce.

I don't have a signature dish, per se, more like a signature area in which I excel, which is desserts, baked treats, and puddings. My specialties in this area include Red Velvet Cake, White Chocolate Chip Ganache covered muffins, and fresh cream and dulce de lish filled profiteroles with chocolate sauce topping.

Turkey dinner Roast turkey, REAL mashed potatos Homemade gravy Homemade stuffing creamed green beans steamed broccoli & califlour / side cheese sauce rolls (Biscuits) from a roll. salad with iceberg lettus, onions, carrott chips, radish slices, tomato wedges, cucumbers, greated cheese. apple and pumokin pie with whipped cream or icecream. ( I make this about 4 or 5 times a year) Also; HALUSKI ( potato dumplings mixed with fried cabbage and fried onions in butter. (the cheat modern day recipe is cabbage & noodles) but I make it the old HUNKEY way my grendmother and mother taught me .

Zuppa Toscana... like they make at Olive Garden, but mine is spicier and heartier. Most people say it's better ^_^ For those not blessed with Olive Garden restaurants, it's a potato and sausage cream based soup with fresh chopped Escarole.

I hate to bake, but I get demands for my boubon, pecan chocolate pie. Making two next week. My choice is blue cheese stuffed, bacon wrapped fillet mignon with a red wine reduction.

This recipe is actually called "Derby Pie" and comes from a good friend's mother in Louisville,KY. It is great for any occasion but really goes over well around Thanksgiving and Christmas. Here it is: Ingredients: 4 whole eggs 3/4 cup white sugar 1/4 cup brown sugar 1 tsp vanilla 2 tbsp bourbon (I make it 3 or 4 and have a shot or two for myself):) 1 cup of light corn syrup 1 stick of melted butter 1 tbsp of flour 1 cup of pecans 1 cup of chocolate chips (I normally use semi-sweet) 1 unbaked 10 inch pie shell Directions: 1)Beat eggs 2)Add sugar, vanilla, bourbon, corn syrup, melted butter. Beat/mix wll (I just use a fork)It should come to a thick light to medium brown consistency 3)Distribute the pecans and choc chips evenly in the pie crust 4) Pour the liquid mess into the pie crust( it should come out almost exactly to the crest of the crust and the nuts will rise to the top) 5)Bake at 350 for 45 to 60 minutes ( Note: After about 45 you just need to check it to make sure the surface isn't burning; also, I wrap the edges in foil at the beginning, because they tend to burn quicker) You can let it cool and serve or do it the day before and throw it in the fridge. Tastes good either way, although it is a bit messy and not easy to cut if it is not refigerated. That's it.....easy as pie. Hope you enjoy it:)

Arroz con pollo - rice with chicken. I cook the chicken separately in chicken stock and two bay leaves. When cooked, I shred the chicken by pulling it apart with two forks. In a separate pot, I place some olive oil, two bay leaves, "sofrito" (made from green peppers, onions, garlic, cilantro, sweet peppers), spanish olives with capers, and a can of tomato sauce. I place as many cups of rice as I will use (usually three), and mix it with the "sofrito" in the pot. Once the rice is all covered, I then add four cups of chicken stock, and the cooked chicken. I add an envelop (or two) of Sazon Goya and Adobo Goya (to taste). You may add salt instead of Adobo. I let it boil until the stock evaporates, then I lower the heat, turn rice over, and cover the pot. I wait another twenty minutes til I turn the rice over again. When the rice is cooked (should be tender to taste), turn off heat. Enjoy!!!

A very simple one and easy to make it is called Kuku: Clarified butter or vegetable oil 1 1/2 teaspoons kosher salt 1 teaspoon ground cumin 1/2 teaspoon ground cardamom 1/2 teaspoon ground cinnamon 1/2 teaspoon finely ground black pepper 1 packed cup finely chopped spinach (about 3 ounces) 1 medium leek, white and pale green parts only, halved lengthwise, rinsed, and thinly sliced crosswise 1/3 cup finely chopped Italian parsley 1/4 cup finely chopped cilantro 18 large eggs Heat the oven to 325°F and arrange a rack in the middle. Coat a 13-by-9-inch baking dish with clarified butter or vegetable oil; set aside. Mix together salt, cumin, cardamom, cinnamon, and pepper in a large bowl until evenly combined. Add spinach, leek, parsley, and cilantro and mix until evenly coated. In a second large bowl, whisk eggs until yolks are broken up. Pour egg mixture over greens and mix until evenly combined. Pour mixture into the prepared baking dish and bake until firm in the center, about 25 to 30 minutes. Let rest 5 minutes. Slice into 8 to 12 pieces and serve warm or cold.

Banana Caramel Bread Ratatouille Here's the recipe for Apple Cobbler, since I just made one. Apple filling 4 large Granny Smith apples, peeled and thinly sliced 1/2 cup of dark brown sugar 1 tablespoon of fresh grated ginger 1 teaspoon of cinnamon 1/2 teaspoon of cloves 1/4 cup of good quality Brandy (optional) 1/4 cup of Sunmaid Raisins (optional) Topping 1 cup of all purpose flour 1 packet of instant cinnamon spice oatmeal 1/4 cup of brown sugar 1/2 stick of (very cold) butter (chopped into small cubes) In a large saucepan combine the Apple Filling ingredients and cook until the right consistency, about 15 minutes. Let mixture cool a bit and put it in a casserole dish. Preheat oven to 350â—¦F In a separate bowl, combine all the topping ingredients, and incorporating the butter with your hands until it reaches a crumbly, yet pliable consistency. Put a thick layer of the topping onto the apple mixture in the casserole dish. Bake on middle oven rack at 350â—¦F for about 10 minutes, and then set the oven to broil to brown the top. Keep watching the cobbler until it gets to the desired brownness that you like. Let cool for five minutes and enjoy!!
