My lemon balm plant's leaves are turning yellow with black spots that then proceed to take over the leaves and the stalks until they wither. What is this and how can I stop it? I haven't been able to find an answer anywhere...

That shows a deficiency in Magnesium, which stops the leaves from protecting themselves from fungal infections. You could try feeding them with some plant fertilizer that contains magnesium and to help to get rid of any possible fungal problems you could dust the plants with Sulfur powder. -
