  • I love okra : ) It has a distinctive earthy flavour, not to every-ones liking. It can be cooked with or without meat. I prefer it without, cooked with olive oil and tomatoes. Chop an onion, chop fresh tomatoes and place in pan with about 4tbspns olive oil. Top and tail the okra and add to the pan too. Season with salt then place on a low heat, cover with a tight fitting lid and let it cook gently. Check that it doesn't dry out... add a little hot water if necessary. It shouldn't take more then 20 mins to cook. Serve with rice. Enjoy : )
