Actually, from the shows I have been in, more common is the bouquet at the OPENING night performance, sort of as a "good luck on the run" gesture. But heck, you can't go wrong with flowers on any night - except to a stripper, of course. Gypsy Rose Lee reportedly said they were a symbol of death to those ladies.

Any night is okay, but if you are there on opening night that would be the night. If you are unable to attend opening night, the final performance is also a good night. Another thing to remember about live flowers and live performances is that opera singers (and other performers in an opera, such as the ballet dancers) consider live flowers in their dressing rooms to be terribly bad luck. Throw a flower to them onstage, but a surprise bouquet in their dressing room may cause them to throw the performance. I have heard that dead flowers are okay in the dressing rooms (and sometimes even a symbol of good luck) but I wouldn't try it out myself.
