I have NO knowledge of rabbits but I wonder if maybe he is not used to your smell yet and cleans it off of him.

Maybe the bunny suffers from OCD. or its a Germaphobe...LoL. but really its prolly cuz their furr gets matted down, or rubbed the wrong way alittle bit, so hes just straightening it out.

I could guess that he is rearranging his fur whenever you touch him or it could be a coincidence. I'd try to use the time to groom him, even if it's just by petting him and offer your hand to see if he will accept you and groom you. If he's in a grooming mood, maybe he will reach out to you and show you where he'd like you to groom him.
