Because the blend combines the desirable characteristics of both types of material. For example, cotton "breathes" well, but holds wrinkles a LOT. Poly doesn't hold wrinkles nearly as badly and changes the texture of the blend so it feels different. Also, poly doesn't stain like cotton does, and a blend may have some durability advantages over 100% cotton.
