Try this...Shred the parsnips just as you would a carrot. Get a big bowl full of them and deep fry them. When golden brown, drain them and place on a paper towel to drain off excess oil. Sprinkle with cajun seasoning. They are practically like chips...Soooooo gooood! I top off my salmon in lemon butter caper sauce with the fried parsnips. A really remarkable dish.

About one month ago. I only eat them roasted.

To the best of my recollection I have never knowingly eaten parsnips and any contrary statements either I or my office may have issued regarding earlier parsnip use are now inoperative. It is my hope we can get past this incident and work together in a world where we are not distracted by partisan vegetable bickering.
