They usually happen when bacteria somehow manage to get directly into your lungs. Normally the tonsils are supposed to protect your lungs from the majority of airborn contagions, but like even the best defenses, they don't always work. Once the bacteria, whatever it may be, gets into you lungs, your body starts producing mass ammounts of mucus to help flush it out. And leaves you coughing your guts up to clear it all out, because all that bacteria laden mucus has to go somewhere. Nasty little symptom, best of luck with it.
