The Driving School is located in San Fierro and will be unlocked after you complete the mission "Deconstruction" for the garage. Jethro will call you and tell you where it is located. You'll find it just to the South of the garage with a small car park in front of the main doorway. The Flying School is located inside the Abandoned Air Control tower at the Verdant Meadows airfield in the Desert. It is unlocked after you complete the mission "Verdant Meadows" for the Mike Toreno (which also involves buying the place for $80,000) and you will be required to complete it before being allowed to do any more missions. The Bike School is located just South of the Stadium to the West of Las Venturas. It's always open from when you have access to LV, so you can head over there whenever you have time. The Boat School is located to the North East of the Gant Bridge. It's always open from when you have access to the desert, so you can head over there whenever you have time.
