You could say they get their omega 3 (oil/fat) indirectly through solar radiation in that solar radiation (sunlight) is the 'fuel' which stimulates photosynthesis in the base of the food chain: algea. Other animals eat the algea, the fish (salmon, sea trout) eat the animals, convert them, and get fat. As far as the special characteristics of the omega 3 oils, they are more related to the genetic makeup of the fish in question and how it processes lipids (oils/fats).
