Photovoltaic Solar panels can store the collected energy in batteries/accumulators. Really big solar installations do hydrogen generation by electrolysis of water and store the hydrogen. The same techniques can be applied to a gym full of spinner with generators, I guess.

They investigated this question on "The Nakes Scientist" podcast. Ultimately, the answer was that the machinery you'd have to use to collect the energy from each bike, etc. would be more expensive than the energy you'd ultimately extract.
