The ones that do are called Deciduous. Conifers don't lose leaves or needles (fir trees). It is for conservation of food and water for the trunk of the tree to sustain life. By eliminating unneeded leaves or problem branches, it preserves itself during the winter. When spring rolls around and the ground is moist and sun is warmer, it can utilize these for food and energy. Using carbon dioxide as food and creating oxygen. Does this help any?

Those who shed their leaves do so when the ambient temperature triggers a chemical in the stem of the leaf signalling it that it is time to release the leaf. This is why a tree seems to lose its leaves so suddenly.
