Clarified butter is also called drawn butter. It is unsalted butter that has the milk solids and water removed so all that remains is pure liquid butterfat. It is made by melting butter over low heat until three layers form. The top layer is a white foam or froth which is skimmed off. The milk solids drop to the bottom. What is left in the middle is called clarified butter.

when you melt butter, it becomes clear. there may be a bit of foam on that butter after it meklts, remove that with a spoon and voila, clarified butter.
