Yes ... I add it to many of the meals that I prepare at home, and I do eat it ... when at a restaurant that decorates a plate with it, I may nibble a bit, shortly after the meal, just to help freshen my breath, but I will leave most of it on the plate. Amir's is a very nice Lebanese restaurant that serves an excellent type of salad with lots of parsley ... I like and will eat that.

Is it edible? Yes, you can eat it. It is more for decoration, but it is also very good for you. It would not be included in the meal if you were not invited to eat it. Do I? Yes. ~Peaches

If it is served on a plate and I have had a meal with lots of onions and garlic I do. It contains chlorophyll which helps kill bad breath, incidentally parsley is very nutritious - high in antioxidant vitamins A and C, and iron.
