    In a flat white, the volumized part of the milk is folded in with the unvolumized portion, creating an extremely inviting mixture. It is then poured into the espresso shot, just breaking the crema (the layer of emulsified oils in a good shot of espresso).     Flat White is way of making coffee (like cappuccino or americano). It is a term widely used in Austrailia and New Zealand (possibly originating in the US) A flat white is made in a small cappuccino cup with a shot of espresso tipped up with hot milk. The cappuccino froth is held back, hence the 'flat'.
