Despite its better known function of producing insulin and glucagon, which regulate blood sugar levels, in its tiny Islands of Langerhans, the pancreas's main job is producing enzymes for digesting food. It's proteases do the largest part of the job of digesting protein. The main proteases are trypsin and chemotrypsin. The pancreas produces pancreatic lipase for digesting the main types of fat. The pancreas produces amylase for the digestion of starch. The pancreas produces a host of other digestive enzymes, including ribonuclease, deoxyribonuclease, gelatinase and elastase.
