It's proteases do the largest part of the job of digesting protein. The main proteases are trypsin and chemotrypsin. The pancreas produces pancreatic lipase for digesting the main types of fat. The pancreas produces amylase for the digestion of starch. The pancreas produces a host of other digestive enzymes, including ribonuclease, deoxyribonuclease, gelatinase and elastase.
