First off you should be aware that each country’s heraldic traditions are a bit different. Scottish heraldry is a bit different from English heraldry, which is a bit different from French heraldry which is a bit different from German heraldry. . . you get the point. For English heraldry a very good introduction in only about 640 pages is Complete Guide to Heraldry By Fox-Davies/A.C. It was originally published at the end of the 1800s, but has been available in new editions ever since. Since it's been in print so long, it is pretty much a 'standard'.
