http://www.foodtv.com/ http://www.cooks.com/ Very simple and very flavorful is to use Olive Oil, some Kosher Salt and fresh cracked Pepper on the Veggies of your choice (I usually used, red, green, yellow and orange bell peppers any or all of the different colors, sliced, Asparagus, break off the tougher bottom parts, red or sweet onion sliced up, Fresh Garlic cloves with the "paper" shell removed or not..you can roast a whole one if you love garlic. I've also added Broccoli, Brussle Sprouts for those who like them. I haven't tried carrots but they would probably work too, cut into strips like carrot sticks, or the baby carrots, oh and those cherry or grape tomatoes are GREAT roasted too. Clean, cut up what needs cutting, place on a foil covered cookie sheet (preferable one with edges so your Veggies don't escape.) Drizzle Olive oil over them, sprinkle with the K. Salt and black pepper to taste. Roast in the oven at about 350 for about 20 to 25 minutes, maybe a bit more depending upon how hot your oven tends to run, mine runs hot. (Put the tomatoes in later, they roast faster, and are done when they start to split.) These can be enjoyed as they are or added to a big salad (still warm) of spinach and romaine lettuce. You can then add some roasted chicken ripped or cut up...breasts or other parts, it matters not. If you want to be really fancy make your own croûtons with French or Italian bread that you let sit OUT over night, cut in to fair sized chunks, not tiny...after all you didn't buy these, you made them, they taste excellent and you want people to see your work! <wink> and drizzle olive oil over mixing with your hands to coat the pieces...then sprinkle garlic granules and grated Parm cheese over...toast them in the oven, spread out on another foil covered cookie sheet, at 350 for about 15 to 20 min...but keep an eye on them you want them toasted, but still slightly soft in the center... You can remove the skin from the chicken if you are going to really low fat, or don't care for the skin...roast that as you normally would. For the salad thin slice or grate some fresh Parm cheese and also mash up your roasted garlic before you throw it in. ENJOY Happy Cooking Adventures!

Okay, it's not a website, but I would highly recommend the Moosewood cookbook. There are a lot of simple, delicious vegitarian dishes in there.
