I would hide in the rafters and use a doppleganger at the door and if a fight broke out I would slip a noose around the neck pull them up kill them and hide them in the rafters. AND NOW SINCE YOU KNOW MY SECRETS YOU MUST DIE. NINJA VANISH........*poof*

Part of the bouncers job is to be a visible deterrent. No one would see the ninja.

Nope. Ninjas were trained in stealth and visiblity whereas a bouncer is meant to be a visual deterrent to would be trouble makers. Also ninjas were trained in assassination whereas a bouncer's job is to eject troublemakers without causing problems. Litigation from guy's being killed is a problem for a bar owner.
