  • I like to make "Seafood Pan Enchiladas". Layered White Corn Tortillas with Shrimp,Crab,Shrooms,Cheese, Black Olives, Green Chiles, Fresh Cilantro, Cream of Mushroom & Celery Soups in a Flour Rue. Tam on the other hand says it our Christmas Smoked Standing Rib Roast Smoked for 12 hours over Mesquite from our property. Either way, there is never any "Left Overs" of either the 15 Lb. roast or 3 pans of Enchiladas. John
  • I love to cook, so it isn't one set meal. I would call my signature meals the dishes that I prepare the most often. Every week, I tend to make a pasta bake with meat sauce or a chili. I make baked chicken or tilapia dishes. I think my signature dish tends to be a baked one, LOL! Unrelated, I won a goldfish tonight at the fair... you are an animal lover, and I am wondering if you have any tips for how to take care of it. I love my fish and don't want it to die.

  • It's a simple dish but seems to be a favourite with people i've cooked it for in the past, roasted vegetables; shallots, garlic, tomatoes, parsnips, new pototoes etc with feta cheese and lots of fresh herbs.

  • Spaghetti with meatballs with a 5 cheese blend. the meatballs are lean ground beef and Italian sausage combined. served with a tossed salad and buttered Yeast rolls. Add chilled red wine.
  • When I go out, I love a Chateaubriand steak with a nice pinot noir. The place I go also make a caesar salad from scratch, right at you table. At home, I make a spanish rice dish that I have modified to turn it into a main course from a side dish. My wife and family love it. It not hard to make but does involve some onion, pepper and parsley chopping.
  • i love to cook and i adore spicy foods. indian food is one of my absolute favorites. my curries are a labor of love ~ it takes a while to prepare, but the end result is worth every minute. i make my own garam masala and curries and freshly roast and grind them for my dishes. my favorites are roghan josh (curried lamb), which i poke holes into and marinate overnight so the flavor is infused in every bite, brinjal bharta (eggplant, tomatoes and onions), spiced basmati rice, garlic naan and dal makhani (lentils). i serve this with mango lassis (yogurt drink) and kheer (rice pudding). if im cooking for unadventurous palettes, my other signature meal is pork tenderloin with jack daniels cream sauce. i make a mir pois (onions, celery, carrot, vermouth, herb reduction) roux, grill the tenderloin to perfection, and slather it with my creamy morel or portabella mushroom sauce. extra prima good! ive never had a friend turn down a dinner invitation! :D
