"The Japanese sea urchin, or uni, is a dark spiky, round sea creature that varies in size, depending on type, from 1-1/4 to 1-1/2 inch to over 4 inches in diameter. Only the ovaries are eaten. Fresh uni is one of the regular items for sushi toppings and is also used for making hors d'oeuvres. It provides an interesting golden coating for some seafood, such as squid, that is to be grilled and also an unusual dressing for many shellfish. Salted uni is also available." Source: "Japanese Cooking" by Emi Kazuko, published by Hermes House. twinkle: What we call "urchin roe" really is the gonads, not the eggs. Actually, both male and female "roe" is used. The male roe, or testes, are more likely to be orange in color rather than yellow, as the female roe, or ovaries. You might want to read the article here: http://www.catalinaop.com/vogue1.htm with particular attention to the beginning of the second page, where it says: "The strips of 'roe' are really male and female gonads, the testes and ovaries. We use the word roe because it sounds nicer."
