I grow radishes, tomatoes, corn, cucumbers and peppers every year. Are any of them easy? I don't find gardening to be easy but it does help me to relax so I do it every year. Last year I started an asparagus bed. Supposedly the only hard part to that veggie is the actual planting. I also started an herb bed last year. You really have to find the things that grow well for you in the type of soil you have. Good luck and have some fun with it.

Green beans yo... They grow like weeds.

If you've got space, try pumpkins, zucchini and melons. If you haven't go for Tomatoes, onions and potatoes. A little maintenance is always required, killing bugs and trimming dead leaves and such, but they tend to be high yield and take care of themselves.

There is an old wine barrel half filled with soil where fresh herbs such as basil, rosemary, tarragon and lovage grow. It's easy to maintain. I hope herbs are vegetables and if not then... Tomatoes seem to do quite well and so do potatoes and onions as well as Cucumbers and string beans.

I always have great success with green onions, radishes, tomatoes, zucchini, and Brussels sprouts.
