  • I got this receipe from the owner of the blueberry farm I pick from: Ice Box Blueberry Pie: 3/4 cup sugar 1/4 TB salt 2/3 Cup water 4-5 Cup Blueberries 2 TB butter 1 1/2 TB lemon juice 1/4 Cup Grand Marnier liquer (or concentrated orange juice) single pasrty pie shell 8-9" combine suga and cornstarch and salt in saucepan. Add 1 cup blueberries and water. Heat to boiling, stirring constantly, boil until thick (~15min). Remove from heat and add lemon juice and Grand Marnier. Let cool. Stir in remaining blueberries into colled mixture. Fridge for 1 hour and place in pasrty shell. Fridge for 1 more hour before serving. Stores in refridgerator. Okay! Long answer, but worth it! Have fun with your blueberries...

In large bowl of electric mixer, combine oil, eggs, and sugar, mixing well. Gradually add dry ingredients to creamed mixture, stirring until just moistened. Stir in berries and nuts. Spoon mixture into 2 greased and floured loaf pans. Bake at 1 hour at 350 deg F or until tested done. Cool in pans 10 minutes; remove to wire racks to cool completely. These freeze well; make multiple loaves with extra berries.
  • Blueberry White Chocolate Pie single precooked pie crust blueberry filling (1) white chocolate cream (2) whipped cream (3) (1) blueberry filling 2 c. fresh or frozen blueberries 1/2 c. sugar 1 1/2 tbsp. cornstarch or 6 tbsp. flour 1/4 tsp. grated lemon peel 1/4 tsp. cinnamon 1/4 tsp. grated nutmeg 1/2 c. water 1 tbsp. lemon juice Mix dry ingredients in saucepan. Add water gradually. Bring to a boil, add blueberries and cook 3 or 4 minutes until clear and thickened, stirring constantly but carefully to prevent berries from crushing. Remove from heat, add lemon juice. (2) White chocolate cream 2 ounces good-quality white chocolate (such as Lindt or Baker's), chopped 2 tablespoons plus 1/2 cup chilled whipping cream Combine chopped white chocolate and 2 tablespoons whipping cream in small metal bowl. Set over small saucepan of simmering water and stir until white chocolate melts and mixture is smooth. Cool white chocolate mixture 10 minutes. Beat remaining 1/2 cup chilled whipping cream in medium bowl until soft peaks form. Fold in white chocolate mixture. (3) whipped cream 1 cup heavy cream 1 teaspoon vanilla extract 1 tablespoon confectioners' sugar In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like. To put it all together: Layer blueberry filling, then white chocolate cream in pie shell, top with whipped cream. Keep refrigerated until ready to serve..

  • EASY BLUEBERRY MUFFINS 1/4 c. butter 1/4 c. shortening (or total of 1/2 c. butter) 1/2 c. sugar 1 egg 1 c. milk 2 c. flour 3 tsp. baking powder 1/2 tsp. salt 1 (8 oz.) pkg. frozen blueberries, or 1 c. fresh blueberries Preheat oven to 400 degrees. Blend together butter, shortening, sugar, egg, and milk. In separate bowl, mix together flour, baking powder, and salt. Then blend together the two mixtures, but not too much. Dough should be tunnely. Fold in blueberries. Bake 30 minutes or less.
