Suger deposits make the insides turn brown when they are exposed to air.....the outside usually just means it is rotting...

Exposure to the air causes oxidation. This is also true of bananas. The best way to prevent this is to coat the fruits with lemon juice if you want to serve them for a party. This keeps them looking appetizing. The browning, however, does not affect the taste or quality of the fruit and will not make you ill. It is just more esthetically pleasing when it isn't darkened from exposure to the air.
