Our assigned temple is Chicago, which is the closest to our home. However, our previous home was almost equidistant from the Columbus, OH, and Louisville, KY temples, and our stake kept switching between the two. At one point they even told us that the northern half of the stake was Columbus, but we in southernmost part could go to whichever we darned well pleased! ;-)

You can attend wherever you happen to be, of course. The assignment refers to defaults for ward and stake activities and assignments. Typically the assignment will be to the closest facility but if the differences aren't too great there may be some adjustments made to balance out workload. If Columbus is crowded and Louisville is not, and distances aren't onerous, they might shift some traffic to Louisville. Then too, when new temples are added the surrounding districts change to equalize the workload. Some temples are remote and some cities have a relatively higher concentration of LDS, but to the extent possible you don't want one temple to have 2 stakes assigned to it and a neighboring one to have 50 stakes assigned.
