  • When I ate eggs (I'm vegan now) I used to order them over hard. I didn't like a soft yolk.

  • In all the years I was in the business, I never prepared or cooked an order of "eggs over hard" or "I don't want a runny yolk". It seemed more natural if a customer wanted a hard yolk, he or she would order hard-boiled eggs. I would prepare those the same way I prepared the regular hard-boiled eggs. The only difference I wouldn't cool them or crack them. Those hard-boiled eggs were served hot. How would I know they were done for the customer? I would put it an extra egg or two and cool-off that extra egg or eggs. Of course, if those eggs were cooked to perfection, I KNEW the customer's hard-boiled eggs were also cooked to perfection.   • I pop the yolk while cooking so the yolk becomes basically the same texture as the whites, I'm not sure if this is the same as "over hard"
  • For years, my little brother would eat NOTHING but "eggs over hard". I worked in a truck stop, and we served eggs any way asked ... over hard (busted yolk), over easy (runny yolk), over easy, well done (seems alot of diners and restaurants never quite get the white part done), hard boiled, sunny side up (no white over the yolk), oh, and SCRAMBLED, of course!
