We take a white pawn in one hand and a black one in the other, and the other player picks a hand. Then we alternate each game.

If its a club team match, then the away team is white on evens (the home team white on odds). If its 1 v's 1 in a competition where the colour has not been determined or if its a friendly match - then as per other persons answer - white pawn in one hand black in the other and opponent chooses a hand and hence the colour. On yahoo and chessbase.com - you can choose whether you want to be white or black or leave it to chance. (You will wait longer for a game if you want to be white - as there will be more people wanting to be white than black).
