Sausage or Kielbasa with onions and bell peppers in a frying pan. Put them in hot dog rolls. Takes about 5 minutes to cook them through. Mmmmmmmm, I'm getting hungry.

Easy easy peasy peasy..now, this is not for everyone, I know. Cook low-carb pasta..use butter, crushed garlic, salt, pepper and maybe some sliced mushrooms to flavor after it is al dente..no red sauce. Heat up some refried beans separately, to which you add grated cheese. Top the pasta with the refried beans. Not only is it delicious, but you are combining beans and wheat, which when combined provides all 8 amino acids. Add a nice green veggie salad to that and I'm in heaven. :) Happy Monday! :)

Cheap dinner? Hard to beat a good old ham and cheese sandwich with pickles on the side! Don't even have to cook for this one! But if I HAVE to cook something simple and quick...spagetti and sauce.

I buy a crock pot dinner/stew in the frozen section of our supermarket, Banquet brand. It's $4.99 on sale and includes beef/or other meats pieces, pasta or carrots, potatoes, etc. in a frozen sealed bag. Just pop it into the slow cooker for 8 or 4 hours depending on the heat setting. I usually add some rice or barley for extra flavor. Makes enough food for the two of us for two + meals. Real easy to do.
